    Welcome to Project Wine

    Established in 2001, Project Wine is a state of the art Grape Processing, Winemaking and Storage facility. The Winery is strategically located less than one hour from some of South Australia’s best known wine regions, including Adelaide Hills, McLaren Vale and Langhorne Creek, and less than two hours from the Limestone Coast and Barossa Valley.

     

    Carefully selected, premium fruit is sourced from various regions across South Australia, offering quality and flexibility to winemakers and clients. We supply a range of bulk wine varieties and styles, tailored to suit the individual needs of small, medium and large domestic and international customers.

    PROCESSING

    Modern facilities and an experienced team, ensure processing is carried out efficiently and to client's exact specifications.

    • Weighbridge with the capacity to weigh up to 60 tonnes

    • Grape receival facilities to suit: tip trucks; side-tipping bins; rotating-head forklifts (for 2.5 tonne bins).

    • Two 25 tonne and two 30 tonne Taylor Receival bins

    • The ability to Whole Bunch press

    • Three 50 tonne, two 35 tonne and one 8 tonne Diemme Air-bag presses

    • Red ferment capacity of 1,775 tonnes per cycle, with;
    - 6 x 5 tonne Open Fermenters
    - 8 x 15 tonne Potters
    - 25 x 25 tonne Static Fermenters
    - 12 x 50 tonne Sweeping Arm
    - 8 x 50 tonne Rotary

    • Centrifuge, Cross Flow Filtration, Earth filtration and RDV capabilities

    • HACCP Accredited
    • NASAA Certified Organic - contract processing of certified organic grapes

    WINE MAKING

    The wine making team, take pride in their attention to detail and the strong relationships fostered with clients, understanding that each client has individual requests and requirements.

    STORAGE

    Wine storage is available for all clients, facilities include:

    • Bulk storage capacity: over 13 million litres

    • Tank sizes ranging from 1,500 to 138,000 litres

    • Insulated Barrel storage for approximately 3,500 barrels

    The modern Laboratory provides a large range of analytical services for both in-house and contract clients, including:

    • Grape Maturity testing

    • Latest analytical technology:
    - Anton Paar Automated Alcolyzer for alcohol determination

    - Mettler Toledo T50 Automated pH/TA meter
    - Steroglass Hyperlab Plus: a fully automated enzymatic analysis unit capable of testing for:
    Malolactic Fermentation
    Acetic Acid
    Glucose/fructose levels in ferments and finished wines
    YAN (Yeast Assimilable Nitrogen)

    - Sulphur content
    - Wine protein stability
    - Rapid cold stability (conductivity) testing

    TASTING ROOM

    An extra facility we offer to our clients.

    The tasting room provides customers a professional setting where they can present their wines to important buyers and visiting wholesalers, or carry out tastings with their own team. The on-site tasting room allows our winemakers to assist with tastings if required.

    BULK WINE SUPPLY

    Bulk wine supply is a key component of our operations.

    Supplying bulk wine to small, medium and large domestic and international customers, we offer a range of wine styles and varieties from key grape growing regions throughout South Australia. Whether to finish and blend, or tailor a wine to suit specifications, style and quality, our selection of bulk wine is catered to customer needs.

     

    We are proud to work with some of the world’s leading wine retailers, with wine quality and continuity expertly managed by our experienced and professional wine making team.

    Formerly known as Langhorne Creek Winery, the winery was built in 1999. Having tripled in size over the past 18 years, it now has the capacity to crush 15 000 tonnes per vintage.

    Peter Pollard

    Senior Winemaker

    Peter was introduced to the wine industry at a young age and quickly developed a passion. While studying for a degree in Oenology at the University of Adelaide, Peter completed a vintage with Peter Lehmann Wines in the Barossa Valley. Intent on broadening his experience, Peter spent the first half of 2001 working as a contract winemaker with Simeon Wines at Loxton and then travelled to the USA to work the 2001 vintage with Geyser Peak Wines in Sonoma Valley, California. In 2001 Peter joined Langhorne Creek Winery as Assistant Winemaker. Peter continued to grow and challenge himself as the business has expanded and he is now Wine's Senior Winemaker. In his spare time Peter enjoys his cricket and football and catching up with family and friends.

    Matt Davey

    Winemaker

     

    Matt has had a diverse and exciting nineteen years, in the wine industry. He graduated in oenology, at the University of Adelaide. He has worked extensively throughout Australia, and has been at Project Wine for the last five years. Matt appreciates varietal and regional characteristics, but favours Grenache as a whole. Fruit quality is pivotal to making good wine, with minimal intervention as necessary.

     

    Outside of the wine world, Matt is an accomplished beer brewer, and hands on making various healthy culinary delights. He enjoys working out at the gym, as his mantra is a healthy body results in a healthy mind. He is a regular on the track at Tailem Bend, practicing his drifting techniques in his Renault. He dreams of one day competing in the Dakar Rally, and is a fan of all things automotive. He also enjoys cultural activities and the social scene, while spending time with his family.

    Laboratory Technician

    Join a passionate team at the heart of South Australia's wine country.

    Project Wine Pty Ltd is a leading grape processing, winemaking, and storage facility located in the beautiful Langhorne Creek wine region. We work with premium fruit from across South Australia, offering contract services to a diverse client base and producing wines for both domestic and international markets.

    We’re currently seeking a Laboratory Technician to support our growing operations. This is an exciting opportunity to be part of a collaborative, quality-focused team in a dynamic and rewarding industry.

    What You’ll Do

    As a Laboratory Technician, you’ll play a key role in ensuring the quality and consistency of our wines. Reporting to the Laboratory Manager, your responsibilities will include:

    • Performing routine laboratory tests (e.g. Sulphur Dioxide, pH/TA analysis)

    • Sampling from tanks and barrels in multilevel winery

    • Calibrating and maintaining lab equipment.

    • Recording and reporting analytical results accurately

    • Conducting grape and juice maturity analysis and assisting with weighbridge operations during vintage

    • Liaison with internal and external customers of the laboratory

    • Maintaining a clean and organized lab and tasting room environment

    • Following Good Laboratory Practices (GLP), HACCP, and workplace safety protocols

    What We’re Looking For

    We’re looking for someone who is enthusiastic, detail-oriented, and eager to learn. You don’t need to have winery experience—just the right attitude and a willingness to grow.

    Key attributes include:

    • Strong communication, literacy, and numeracy skills

    • Ability to work independently and as part of a team

    • Good time management and the ability to work under pressure

    • A positive, can-do attitude with a sense of fun

    • Willingness to learn and operate more advanced lab equipment

    • Flexibility to work extended hours and weekends during the vintage season (February–May)

    Additional Skills That Will Help You Succeed

    • Basic data entry and spreadsheet proficiency (e.g., Excel or Google Sheets)

    • Familiarity with LIMS (Laboratory Information Management Systems) or similar software

    • Understanding of basic chemistry or microbiology principles

    • Experience with titration, spectrophotometry, or enzymatic analysis

    • Basic troubleshooting of lab instruments and software

    • Strong attention to detail and commitment to accuracy

    • Problem-solving mindset and willingness to take initiative

    • Adaptability in a fast-paced, seasonal work environment

    • Respect for confidentiality and data integrity

    • Interest in wine science, food technology, or fermentation

    • Openness to cross-functional collaboration with winemaking and production teams
